I can use the 210mm for 90% of my kitchen work
180 is more then enough blade for me!
I've never owned a gyuto before but of the ones I've tested I prefer 210 or 220 mm
I'd guess 210mm. I got a 190mm chefs and a 240 gyuto, but I feel ones just too short and the other a tad too long. Lets see if I get to extensively try a 210mm one if that or a 240mm would be best.
240mm so far. Love the extra cutting edge!
I really like the 210 as it is still small enough for a home cook like me, but I have never owned a 240.
My favorite size is 240mm. I find it most versatile, especially when I am cooking in larger batches, but still nimble enough for every day jobs. Keep up the great work!
210mm gives me just the right balance, while still feeling comfortable and controllable doing smaller tasks like cutting garlic.
I find myself always reaching for the 210 mm. I feel I can do most task with it.
I've only used up to a 240mm, and overall, the 240mm is my favorite! Nice work.
